Oh My Darling Clementine
Wintry air blows throughout Washington D.C. today, and what a shock it is! Yesterday we were outside in short sleeve shirts and linen pants, today parkas and furry hats. I made every excuse today to not go outside, and it almost worked, until I noticed some essential goods missing from the fridge (butter and croissants). Q and I picked up a box of Clementine's yesterday and they have haunting me all day long. The house needed some heat so the oven got prepared for some cupcakes. I wanted to try something new so I found my new little zester, grabbed some Clementine's and went to work! The smell was amazing!! The house started to warm up, sweet aroma whiffing throughout, and charming cupcakes stood nearby ready for almond vanilla frosting and the best part, tasting!! (Note: This base formula for the cupcakes is one that I normally use, I've had it written down so I'm not sure where it came from or how much I've even adapted it over time!)

Clementine Cupcakes

Zest of two Clementine's
Juice of two Clementine's
1 2/3 cups flour*
1 3/4 teaspoons baking powder
1/2 teaspoon salt
1 stick butter (8 tablespoons)
2 eggs
1/2 (+ two tablespoons) cup milk**
1 cup sugar
Preheat the oven to 350. Gently hand mix together flour, baking powder, zest and salt in a bowl. In a separate bowl, stir together milk and juice, mix.
Cream together the butter and sugar with an electric mixer, and add the eggs. Add part of the dry mixture, let blend, and then add the milk mixture and then the remaining dry mixture until just blended.
Fill a muffin tin (with cupcake liners in place) with the batter.
Bake for 22-25 minutes, until toothpick inserted in center comes clean. Let cool for a few minutes. Apply your favorite icing after they are completely cooled!
* I'll admit, after mixing, if it looks way to watery, I'll eyeball it and add about 3 or 4 more tablespoons flour. Clemetimes vary in size, so you might get more juice than you want.
** I've used whole, 2%, and soy milk...all with good results.

This recipe sounds wonderful - I can smell the cakes cooking! It's not quite cold here - I am in Melbourne Australia and planning to bake for my daughter's birthday on Sunday when it will be 38 degrees celcius! 40 on Monday. Question - can you please tell me what is the equivalent weight of a stick of butter - 125g or 250g. thanks so much sallyann

I made these today and they were divine! I topped them with a citrus buttercream, but I think it overpowered the cake a little. The cake itself was so delicate and flavorful--this is definitely a new favorite! Thanks.

I have a question for you in regards to your aprons. Do you follow a specific pattern type? I love the style, but am not able to find anything similar in the patter section at my local fabric store.
Is the "Tie One On" an event that takes place every month, or is it over?
